Nepali Raita #sikandalouscuisine


Summer means lots of yogurt in any form for me - and you all have had to put up with my many curd rice variation , with many more to come ! Here is a Nepali raita which we often eat at home often only with rice . Adjust flavors.

500 Grams Yogurt - Blend smooth with a bit of water to get consistency you want.
1 Teaspoon Bhuna Jeera Powder.
2 Small cucumbers - Grate from big hole.
Onion Grated - Half the quantity of cucumber.
1 Tomato - Remove seeds and chop into small pieces.
Minced Green Chilies To Taste.
Bit of Green Dhania
Salt.
Mix the above ,and adjust flavors .

Tempering / Tarka
1 Tablespoon Mustard Oil.
7-8 Methe Seeds.
1 Teaspoon Jeera Seeds.
5-6 Black Peppercorn.
1/2 Teaspoon Haldi.

Heat oil add methe seeds , as they begin to color throw in the rest , when jeera is done add haldi and tip this tarka onto the raita , mix in well. We eat this at room temperature.
